Callington Mill Distillery is seeking an experienced and charismatic Maitre D’ / Restaurant Manager to lead our front-of-house operations in our flagship fine dining venue in Hobart.

The Role
This hybrid position blends the elegance and guest-facing duties of a Maitre D’ with the leadership and systems oversight of a Restaurant Manager.
You will be the face of our venue during service while also managing the day-to-day operations that keep everything running smoothly.
Key Responsibilities:
Lead front-of-house service for lunch and dinner shifts
Greet, seat, and engage guests with professionalism and warmth
Manage reservations, table flow, and VIP guest handling
Supervise and train FOH staff to deliver consistently high service standards
Oversee rostering, stock control, and supplier coordination
Collaborate with the Head Chef and Event Coordinator to deliver seamless service and events
Handle daily admin, closing procedures, and service reports
Uphold brand standards and guest satisfaction across every touchpoint
About You
Minimum 2 years experience as a Maitre D’, Restaurant Manager, or similar leadership role in a premium or fine dining environment
Strong presence on the floor with a natural flair for hospitality and communication
Proven ability to lead a team under pressure and maintain service excellence
Highly organised with a proactive and solutions-oriented mindset
Familiarity with restaurant systems, stock management, and rostering tools
Available to work across lunch and dinner shifts, including weekends
A genuine love for hospitality, people, and high-end guest experiences
