JRM Hospitality Recruitment is recruiting for a dynamic and experienced Restaurant Manager to join a premium coastal dining destination in the stunning Sutherland Shire.

About the role:

• Oversee daily operations of a vibrant, high-volume coastal restaurant.
• Lead, inspire, and develop a team, by including regular training and scheduled performance reviews, dedicated to delivering elevated guest experiences.
• Manage rostering, service standards, stock control, and supplier relationships.
• Drive business performance through a hands-on approach to service and operations.
• Collaborate with ownership to implement systems, streamline processes, and ensure consistent excellence.
• Uphold and evolve a strong food and beverage program with a particular focus on wine.

About you:

• Proven experience in a Restaurant Manager or higher position within a premium dining environment.
• Confident, personable leader with a genuine love for hospitality and people.
• Strong understanding of financials, including COGS, labour costs, and budgeting.
• Passion for wine and beverage, with WSET Level 2 or higher highly regarded.
• Hands-on operator who thrives in fast-paced service and enjoys being guest-facing.
• Candidates must already reside in Australia and have full working rights to apply - sponsorship is not available for this role.
• Local knowledge or existing ties to the South Sydney area will be highly regarded.
