JRM Hospitality Recruitment is seeking a passionate and experienced Restaurant Manager to lead the front-of-house team at an intimate fine dining restaurant in the heart of Sydney.

About the role:

• Lead day-to-day service in a sophisticated, fine dining environment.
• Deliver exceptional guest experiences with warmth, confidence, and precision.
• Oversee front-of-house operations, including rostering, training, and team development.
• Champion a premium wine and beverage program, assist the sommelier in curating memorable pairings, and build lasting guest rapport.
• Work closely with ownership and the head chef to maintain and evolve standards, systems, and service style.
• Contribute to the ongoing success of a venue that values professionalism, finesse, and personal connection.

About you:

• Proven experience in a Restaurant Manager or similar leadership role within a fine dining (ideally hatted) restaurant.
• Strong wine knowledge is essential - WSET Level 2 or higher is highly regarded.
• Genuine passion for service, hospitality, and creating exceptional guest experiences.
• Solid understanding of operational financials including COGS, labour, and service KPIs.
• Calm, composed and collaborative leadership style - hands-on and guest-facing.
• Candidates must already reside in Australia and have full working rights to apply - sponsorship is not available for this role.
