We are looking for an experienced Senior Trade Waiter to join our fine dining team, someone who understands the art of service and has a deep appreciation for Italian food, wine, and hospitality.

About the Role

As a Senior Trade Waiter, you will be responsible for delivering an exceptional dining experience, ensuring each guest receives warm, polished, and knowledgeable service. You will take the lead in service execution, table management, and customer engagement while supporting junior team members.

Key Responsibilities

Setting and arranging tables to maintain an elegant and inviting dining atmosphere

Taking reservations, greeting guests, and presenting menus and beverage lists

Recommending dishes and wines to complement food, particularly in a fine-dining setting

Taking and relaying orders to the kitchen and bar with accuracy and efficiency

Serving food and beverages with precision, ensuring all items are presented beautifully

Opening bottles and pouring beverages, including wine service, mixing liquors, and assisting in the cellar

Clearing tables promptly and efficiently, ensuring a seamless dining experience

Removing empty bottles and used glasses, refilling drinks, and ensuring glasses are replaced when needed

Collecting payments for sales, operating point-of-sale systems, and handling transactions accurately

Leading a section of the dining floor, ensuring smooth coordination between the kitchen, bar, and front-of-house teams

Training and mentoring junior staff to uphold the highest service standards

Maintaining impeccable hygiene and service standards in line with fine dining expectations

What We’re Looking For

a Certificate II or III is required, plus 1-year relevant experience, or at least 2 years relevant experience without a qualification

Passion for Italian cuisine, wine, and hospitality

Strong knowledge of food and wine pairings, table service etiquette, and workflow coordination

Ability to train and mentor junior staff, fostering a high-performance team

Engaging and confident communication skills to ensure a warm and professional dining experience

Meticulous attention to detail in table setting, service presentation, and order accuracy

Flexibility to work evenings, weekends, and peak service hours as required
