My client is a dynamic, innovation-focused company specializing in high-quality nutraceutical and functional products.

Successful in their own right on a number of sectors within the nutraceutical space.

Now the leadership team wish to develop in house capability for another with your input and hands on expertise.

They develop science-backed wellness solutions in consumer-friendly formats such as gummies and pastilles, produced in a dedicated manufacturing facility that meets global regulatory standards.

Gummies or Pastilles experience is a pre-requisite need from the food or pharma space to be considered for this particular role.

Role Overview

My client is seeking a Senior Technical/Product Development Technologist to lead the development and scale-up of nutraceutical gummies and pastilles.

This end-to-end role bridges R&D with commercial manufacturing, covering formulation, pilot trials, process optimization, and regulatory compliance.

Key Responsibilities

Formulation & Product Development:
Develop functional gummies using vitamins, botanicals, probiotics, and other actives. Select appropriate gelling agents, manage ingredient interactions, and optimize taste, texture, and stability.

Pilot Trials & Scale-Up:
Conduct lab and pilot trials, analyze technical feasibility, and support transfer to full-scale manufacturing. Define critical quality and process parameters.

Process Engineering & Improvement:
Lead improvements across cooking, depositing, drying, and packaging. Implement automation, root cause analysis, and quality corrections.

Regulatory & Quality Compliance:
Ensure compliance with TGA, FSANZ, cGMP, and HACCP. Prepare technical documentation, stability data, and support ARTG listings and label compliance.

Cross-Functional Collaboration:
Work with procurement, marketing, packaging, and external vendors to ensure cohesive product development.

Training & Knowledge Transfer:
Educate production staff, lead technical reviews, and support new product launches with sound technical leadership.

Required Expertise

Deep knowledge of gummy and pastille development, including actives like vitamins, minerals, and probiotics

Expertise in taste masking, encapsulation, and texture science

Familiarity with manufacturing equipment and challenges

Regulatory knowledge across Australian (TGA, FSANZ) and global markets (FDA, EFSA)

Qualifications

Bachelor’s or Master’s in Food Technology, Pharmaceutical Sciences, Chemical Engineering, or similar

5–10 years’ experience in product development, ideally with nutraceutical gummies

Proven track record of taking products from concept to launch in regulated environments
