The Rising Sun Hotel has stood proudly on the corner of Burnley and Swan since the 1800s, watching the world change while remaining, mercifully, the kind of pub where you can still get a proper pint without downloading an app. Now, reopening in late-April from the team behind the Royal Oak (Fitzroy North) and The Sporting Club (Brunswick), it’sentering a new era, one that champions warmth, familiarity, and food that’s proudly, wonderfully pubby.
About the Role
We’re on the hunt for a Sous Chef to help bring this next chapter to life.
Reporting to our Head Chef and Executive Chef, you’ll help lead and inspire a small but driven kitchen team. This is a hands-on, full-time role ideal for a Sous Chef who’s hungry to contribute to a seasonal, produce-led menu and who thrives on high standards without high drama.
You’ll be across every part of the service: managing prep, coordinating sections, supporting on grill, larder, fryer and pass. You’ll also mentor CDPS, Demis and Commis Chefs with a focus on systems, training and development, ensuring consistency across service and encouraging pride in every dish that leaves the kitchen.
We're not interested in bravado, just chefs who respect the work, the team, and the plate.
What We’re Looking For
Minimum 3 years’ experience as a Sous Chef or strong CDP ready to step up
Solid leadership skills — you can train, delegate and uplift those around you
Strong organisational skills and calm under pressure
Confidence working across all sections, especially grill and pass
A passion for seasonal produce and traditional techniques
Commitment to cleanliness, safety and respectful workplace culture
Certificate III in Commercial Cookery or equivalent qualification
What You’ll Be Doing will include but not be limited to:
Supporting the Head and Executive Chef in day-to-day kitchen management
Leading service and upholding standards in prep, execution, and presentation
Supervising and mentoring junior team members
Assisting with menu development, cost control, and stock management
Ensuring compliance with HACCP, OH&S, and internal kitchen policies
Contributing to a collaborative kitchen culture where respect, humour, and hard work go hand-in-hand
What We’re Offering
$75,000-$85,000pa salary + super (depending on experience)
Full-time permanent position under the Publican.Co Enterprise Agreement
