A brand-new Italian dining experience is preparing to launch, and we're on the hunt for a Head Chef ready to lead the charge. This is your opportunity to take creative ownership of an opening from the ground up – from menu development and supplier sourcing to team building and operational leadership.

The Role

You’ll be responsible for the complete back-of-house operation including:

• Leading all aspects of kitchen setup and service for the venue launch
• Designing the start-up and seasonal menus, including costing, portion control, and recipe documentation
• Building and mentoring a high-performing kitchen brigade
• Ensuring smooth day-to-day operations, including rostering, training, and compliance
• Monitoring and achieving key financial targets including food costs, wages to sales, and profit margins
• Implementing best-practice systems across food safety, WHS, and HACCP compliance
• Driving innovation that keeps the offer fresh, market-relevant, and financially sound
• Leading by example – this is a hands-on, on-the-pans leadership role

What You Bring

• Proven experience as Head Chef or Senior Sous in a high-volume, quality-driven venue
• Deep knowledge of Italian cuisine with a strong understanding of modern food trends
• Experience opening or relaunching a venue highly desirable
• Strong leadership skills with the ability to train, develop and retain staff
• Solid financial acumen, confident working with P&Ls, COGS, GP, and labour targets
• Excellent organisation, planning, and problem-solving abilities
• A passion for excellence and an unshakable commitment to quality and consistency
• Strong understanding of compliance, WHS, and food safety regulations
