Position: Chef (full-time)
Salary $73000 - $80,000 plus superannuation
Location: South Melbourne

The Restaurant

Trading since 2010, we are the sister restaurant to the iconic Claypots Seafood Bar in St Kilda and Claypots Barbarossa anchored in Hardware Lane.

The venture is located on the outer corner of the South Melbourne Market and our crew have been gladly voted South Melbourne Market’s Favourite Eatery for continuous two years.

Our seafood restaurant as features a fusion of Mediterranean and Asian styles with an emphasis on fresh, local and delicious seafood.

Besides our traditional dishes, our chalkboard menu also changes daily with variety of fresh fish according to market's availability . This variableness requires our cook to work flexibly with chefs to produce quality dishes.

Your duties

preparing for service, which includes ensuring the kitchen is well stocked with the necessary ingredients, as well as cleaning, cutting and marinating food

cooking and serving food, while coordinating with other kitchen staff and wait staff

maintaining the cleanliness and tidiness of the kitchen

creating new dishes and planning menus

ensuring that dishes meet high standards at all stages of preparation and presentation

hiring and training junior chefs

Portioning food, placing food on plates, adding sauces, garnishes and gravies

Regulating temperatures of ovens, grills, broilers, fryers and other cooking equipment

Testing food before servicing in other to determine if they have been sufficient cooked (smelling, tasting, piecing with utensils).

Examining food product to ensure quality before cooking and after cooking

Ensuring meals comply consistently with standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.

Storing food in temperature-controlled facilities.

Preparing food to meet special dietary requirements.

Skills and Experience required for the position

At least hold AQF Certificate III in commercial cookery including at least two years of on-the-job training, or AQF Certificate IV in commercial cookery.

Have previous experience in the industry or in a similar role (at least 1-2 years)

Have relevant qualifications or skills.

Be self-motivated, creative, confident and enthusiastic.

Ability to work in a team.

Good communication skills.
