Fire Baby Restaurant is looking for an experienced and high performing General Manager

(Hospitality) to lead our brand-new venue in Southport.

Launching soon, Fire Baby Restaurant, is a 400-seat destination venue offering a dual dining

experience; premium casual and elevated fine dining under one roof, with a versatile space designed

for unforgettable functions and events. Located at 8-10 Welch Street, in the heart of Southport,

Fire Baby is situated near the beautiful Broadwater Parklands and Gold Coast Aquatic Centre.

Fire Baby is poised to become the Gold Coast’s most talked-about restaurant—bold, vibrant, and

deeply passionate about food, community, and the art of cooking with fire.

As General Manager, you will be pivotal in delivering the Owner’s vision: a world-class hospitality

experience that revitalises Southport and redefines dining on the northern Gold Coast. You’ll build

and lead a passionate team, drive a culture of excellence, and oversee day-to-day operations with

a focus on quality, professionalism, and unforgettable guest experiences.

About you

• Minimum 5 years’ experience managing a medium-to-large hospitality venue.

• Proven leadership experience in both casual and fine dining environments.

• Strong commercial and financial acumen, with a track record of meeting or exceeding KPIs.

• A people-first mindset with the ability to build high-performing, motivated teams.

• Outstanding guest service standards and an eye for detail.

• Proficient in POS systems, stock and labour management platforms.

• Experience with event planning or function space management is a plus.

• A creative problem solver who thrives in fast-paced, evolving environments.

Key Responsibilities

Operational Leadership

• Oversee all day-to-day operations, ensuring a seamless guest experience across casual and fine

dining areas.

• Collaborate with the Head Chef to execute an exceptional, fire-inspired menu.

• Develop and implement high service standards, procedures and staff training programs.

• Maintain compliance with health, safety, food, and liquor regulations.

• Ensure the venue operates to the highest standards of cleanliness, presentation and

professionalism.

Marketing & Guest Engagement

• Work closely with the marketing team to implement campaigns focused on acquiring new

customers, increasing bookings, and boosting local awareness.

• Proactively promote Fire Baby as the Gold Coast’s premier destination for dining, functions, and

private events.

• Support the planning and execution of seasonal promotions, F&B campaigns, and special

experiences.

• Engage with guests and the community to foster loyalty and drive word-of-mouth growth.

Function & Event Coordination

• Manage and promote the venue’s versatile function spaces—including a dedicated private room

suitable for corporate meetings, celebrations, and bespoke events.

• Coordinate full-venue function opportunities, ensuring seamless service from inquiry to event

delivery.

• Work collaboratively with clients and internal teams to customise event experiences.

Financial Control

• The ability to interpret financial reports and statements, identify areas of concern and take

appropriate action to maintain and increase financial performance.

• Develop, manage and monitor F&B budgets & Cost of Goods Sold (COGS), ensuring food and

beverage costs align with budget expectations to ensure financial sustainability and profitability.

• Implement and maintain effective inventory management, minimising waste while maximising

profitability.

• Prepare regular management reports for the Owners, including analysis of revenues, expenses,

staffing, and stock control.

People & Culture

• Recruit, train, roster, and mentor a team committed to excellence in hospitality.

• Foster a positive, inclusive, and high-energy work culture that aligns with the Fire Baby brand

values.

• Lead with integrity, inspire with passion, and support personal development within the team.
