Dining Concepts

Dining Concepts is a multi-cuisine restaurant group and is a wholly owned subsidiary of Far East Consortium Australia.

Established in 2020, our vision is to celebrate the best of the world’s cuisine in unique dining destinations across Australia.

The rollout of restaurants will see more than $37m of investment over 5 years from owner and landlord contributions.

Currently the Dining Concepts group consists of:

1) Rumble

Located in the heart of The Star Sydney dining precinct. Enjoy Thai cuisine that pushes the boundaries of the flavour spectrum.

2) Rumble Ramen

Located in The Star Sydney, let the team entice your tastes with our quick service Ramen.

3) Merriment Cafe

Located within the West Side Place Melbourne precinct (near The Ritz Carlton). Offering coffee's, house made pastries, toasties and soup.

4) Hua Brisbane

Located within Queens Wharf Brisbane precinct, offering Chinese style cuisine.

5) West Side Wine Osteria

Located at West Side Place, and organic focused European wine bar.

About The Role

The Assistant Venue Manager is responsible for the overall operations of the outlet and ensuring consistent and outstanding guest experience. The role will manage all areas of service within the bar and restaurant, including but not limited to, training, motivating and retention of the team, food cost, labour cost, P&L responsibility, staffing plans, safety and hygiene, all whilst adhering to all company policies and procedures and brand guidelines.

What You’ll Be Doing

§ Work with the leadership team to implement unique customer experience.

§ Manage and oversee a section of the restaurant on a shift basis.

§ Liaise with the Restaurant Manager & kitchen team daily to ensure the food offering is being delivered as per expectation.

§ Enhance customer experience through quality service.

§ Staff Training and Development

§ Managing the compliance of monthly reporting (Monthly update, KPI tracking, Quality reports, financial reports)

§ Understanding and ability to learn venue reporting and systems on a daily, weekly and monthly basis

§ Presence on the floor during peak service periods, including late nights and weekends

§ Write and control an effective roster

§ Ability to stock take and investigate the stock loss

§ Order and maintain par levels within the beverage department, food department and venue consumables

§ Train, performance manage, and motivate staff

§ Work with and communicate effectively with all departments within Venue Manager and the Head Office team

§ Be able to implement and execute promotions throughout the business successfully

About You

The successful candidate will be someone with high energy and a positive approach towards building working relationships and overcoming complex challenges.

They will be results driven and confident in their ability to change and adapt themselves as well as their team to work towards common goals.

A strong sense of leadership and an excellent motivator who has the experience and knowledge to understand the combination of detail, quality and volume whilst being able to delegate and set clearly defined expectations.

A strong understanding of financials is essential as well as the ability to operate within the policies, procedures and systems.

2+ years in an Assistant Venue Manager role

RLMV & Approved Managers License (Not Essential)
