Tucked away in the backstreets of Marrickville, Olympic Meats celebrates the raw, unpolished spirit of Greek cuisine in an urban Inner West setting. Drawing inspiration from his background as a second-generation Australian, Tim Cassimatis' (formerly of Barzaari, Vics Meat and Whole Beast Butchery) approach to cooking reflects his heritage, combined with a dedication to craftsmanship that celebrates local produce and bold flavours.
We embark on an exciting new chapter with Olympic Meats, a concept that channels the gritty, no-frills energy of Greek psistaria (grill houses). There’s no attempt to recreate a postcard version of Greece. Instead, we are carving out something real – an honest, unvarnished take on Greek barbecue that speaks to both heritage and the raw energy of Marrickville.

Now, we’re on the hunt for back-of-house legends to join our team. If you thrive in a fast-paced, high-energy environment and know how to bring great energy to a service, we want to hear from you.

At Olympic Meats, we do things differently. We’re not about stiff service or over-polished dining—we’re about big flavours, open flames, and a high-energy atmosphere that makes people feel at home. As part of our back-of-house team, you’ll be in the thick of it, bringing the vibe, keeping the food coming, and making sure everyone leaves full and happy.

You’ll work with a tight-knit crew, serve food that speaks for itself, and be part of a venue that’s all about good people, good times, and damn good food.

Experience in hospitality – At least two years experience in sections or just an all round BOH champ.

Team mindset – We work together to keep things running smoothly, creating a fun and supportive atmosphere for both staff and guests.

Must be able to work Wednesday to Sunday.

Must be able to thrive in a fast paced environment.

Eagerness to learn, push on and have fun with a very fun welcoming team.

Must be willing to learn multiple sections including larder, woodfire oven and grill.

No EGO, just a big team effort.

Chef must have full working rights in Australia.
