Drawing inspiration from his background as a second-generation Australian, Tim Cassimatis' (formerly of Barzaari, Vics Meat and Whole Beast Butchery) approach to cooking reflects his heritage, combined with a dedication to craftsmanship that celebrates local produce and bold flavours.
We embark on an exciting new chapter with Olympic Meats, a concept that channels the gritty, no-frills energy of Greek psistaria (grill houses). There’s no attempt to recreate a postcard version of Greece. Instead, we are carving out something real – an honest, unvarnished take on Greek barbecue that speaks to both heritage and the raw energy of Marrickville.

Personality over polish – We’re after people who are warm, engaging, and up for a chat. No stiff service here.

Experience in hospitality – At least two years experience in sections or just an all round FOH champ.
