About Rue de Siam
Rue de Siam is an established Thai restaurant and bar located in the heart of Adelaide CBD. Rue de Siam offer authentic Thai cuisine incorporating traditional Thai flavours, cooking techniques and presentation, complemented by a distinctive French influence.
We are seeking an experienced and skilled Chef – Thai Cuisine to join our kitchen team on a full-time, permanent basis. The successful candidate will be responsible for planning, organising and preparing Thai dishes to a consistently high standard while supporting the efficient operation of the commercial kitchen.
Position Overview
As a Chef, you will play an important role in the preparation and delivery of our Thai menu. You will be responsible for food preparation and cooking, maintaining food quality and presentation, coordinating kitchen activities, managing ingredients and supplies, and ensuring compliance with food safety and hygiene requirements.
Job role:
· Plan and organise the preparation and cooking of Thai cuisine in accordance with the restaurant's menu and service requirements.
· Plan and review Thai menus, estimate food and labour requirements, and assist with food costing.
· Order and monitor food supplies, ingredients and kitchen stock to support daily operations.
· Prepare, season and cook a range of Thai dishes, including curries, stir-fries, soups, salads, rice and noodle dishes, sauces and other traditional Thai preparations.
· Apply appropriate Thai cooking techniques and ensure consistency in flavour, texture, quality and presentation.
· Monitor the quality of ingredients and dishes throughout preparation and service.
· Coordinate kitchen operations and food preparation to ensure meals are prepared efficiently and served within required timeframes.
· Demonstrate cooking techniques and provide guidance to kitchen staff on food preparation, cooking procedures and presentation standards.
· Monitor portion sizes, food quality and presentation to maintain consistent restaurant standards.
· Discuss food preparation and kitchen requirements with management and other kitchen staff.
· Implement and monitor food safety, workplace health and safety and hygiene procedures in accordance with applicable requirements.
· Assist with training and supervising kitchen staff and apprentices where required.
· Monitor food wastage and ensure appropriate storage and handling of food and ingredients.
TO BE SUCCESSFUL IN THIS ROLE YOU WILL REQUIRE:
· Minimum Associate Degree, Advanced Diploma or Diploma in relevant field (or higher)
· Must be a team player and have at least 1 year full time or equivalent working as a chef with experience in Thai cuisine and traditional Thai cooking techniques.
· Demonstrated ability to work in a fast-paced kitchen and ability to prepare and cook a range of Thai dishes to a consistent standard of quality and presentation.
· Knowledge of Thai ingredients, herbs, spices, curry pastes, sauces and associated cooking methods.
· Planning skills and ability to lead and inspire
· Sound knowledge of food safety, hygiene and workplace health and safety requirements.
· Excellent communication skills and the ability to work collaboratively as part of a team
· Ability to select kitchen staff as required
· Ability to work collaboratively within a professional kitchen environment, including evenings, weekends and public holidays as required.
