We are seeking an experienced and hands-on Assistant Food & Beverage Manager to join our team at Peppers Cradle Mountain Lodge, located on the doorstep of the breathtaking Cradle Mountain–Lake St Clair National Park.

This is an exciting opportunity for a passionate hospitality professional who thrives in a fast-paced environment, leads by example, and is committed to delivering exceptional guest experiences while supporting the Food & Beverage Manager in the day-to-day operation of the department.

About the Role

Reporting directly to the Food & Beverage Manager, you will assist in overseeing the daily operations of the Food & Beverage department while leading, coaching, and developing a passionate team.

Key responsibilities include:

Assisting with the day-to-day operation of the Food & Beverage department across all service periods.

Leading by example to deliver exceptional guest service and professionally resolving guest concerns.

Training, mentoring, and developing team members to maintain high service standards.

Assisting the Food & Beverage Manager with rostering, wage cost management, and labour productivity.

Completing end-of-night cash-ups and ensuring accurate reconciliation of daily takings.

Assisting with stock control, ordering, and inventory management to minimise wastage and maximise profitability.

Ensuring compliance with food safety, liquor licensing, and company standards.

Working closely with the Kitchen, Front Office, Housekeeping, and Maintenance teams to deliver seamless guest experiences.

Supporting the Food & Beverage Manager in achieving operational and financial goals.

About You

You will be:

An experienced Food & Beverage Supervisor or Assistant Manager within a hotel, resort, restaurant, or hospitality venue.

A confident leader with excellent communication and organisational skills.

Passionate about guest experience and building a positive team culture.

Experienced in training, coaching, and motivating team members.

Knowledgeable in stock control, cash handling, and labour cost management.

Able to remain calm under pressure during busy service periods.

Flexible to work weekends, evenings, and public holidays as required.

A hands-on leader willing to support the team wherever needed.
