THE ROLE

Eric’s Kitchen is looking for experienced Cook to join our team!

Located in Boronia, Melbourne, Eric’s Kitchen is a restaurant specialising in handmade Hong Kong’s styled dim sum, including shrimp dumplings, siu mai, tofu skin rolls, rice noodle rolls, pork buns, turnip cakes, and more. Thanks to our wide variety of high-quality products, we have been building a strong reputation within the local Melbourne community. We are currently seeking an experienced and competent Dim Sum Cook to support our continued growth.

Requirements and Responsibilities:

Prepare doughs, fillings, and sauces for dim sum items;

Capable of making dim sum items, such as shrimp dumpling, Siu Mai, Pork Bun, rice noodle roll, etc;

Operate steamers, fryers, and other kitchen equipment;

Control cooking times and temperature precisely;

Follow standard recipes and presentation guidelines;

Monitor food quality and adjust seasoning when needed;

Plan menus, estimating food and labour costs;

Maintain cleanliness of kitchen and equipment;

Discuss food preparation issues;

Monitor ingredient levels and notify for restocking;

May assist and recruitment and training of staff;

Create new dim sum dishes or seasonal variations

Ensure proper handling, storage and labelling of ingredients and prepared items;

Ensure efficient management of goods, produce and minimizing wastage; and

Follow and enforce food safety and sanitation regulations.

REQUIREMENTS

To be considered as a right candidate, you will need to demonstrate:

Candidates must have a minimum of 2 years work experience working in Hong Kong-styled dim sum preparation and making.

Preferably possess relevant qualifications in commercial cookery and hospitality management (not necessary if candidate demonstrating proven working experience);

Be capable of working in a fast-paced kitchen environment;

Be capable of working with a minimum degree of supervision;

Be competent of ensuring the efficiency of kitchen’s operation;

Have strong communication skills who can cooperate with all other employees in the business;

Have advanced knowledge of occupational health and safety;

Have Excellent personal hygiene skills, great presentation and strong working ethics;

Strong attention to details and pride in your work

Willingness to adapt and be flexible
