Wards Central Dining is ready to turn up the lights (and the vibe) after dark — and we’re looking for a Night Manager who’s as passionate about service as they are about WA wine and cocktails.

This is your chance to take ownership of Wards’ evening offering and bring it to life. You’ll lead a small, experienced team across dinner service, wine and cocktail curation, and help us grow our night trade into something truly special.

If you’re a confident hospitality leader with a sharp palate, a solid handle on the floor, and love the buzz of a dining room humming under ambient lighting — this is your stage!

What You’ll Do

• Run the room: You’ll lead nightly service from start to finish — keeping the mood high and the standards higher.

• Own the drinks program: Regularly update and evolve our wine and cocktail menus, featuring WA’s best wineries and your own flair.

• Expand the evening service: Collaborate with the GM and broader team to grow our dinner nights and guest offering.

• Manage people and performance: Rostering, team development, wine and RSA training, and creating a fun, efficient FOH culture.

• Maintain compliance: Hold your RSA Manager’s certification and manage all service-of-alcohol responsibilities.

• Create atmosphere: Wards is more than a restaurant — you’ll help shape the evening personality of the venue and connect with the local community.

• Days and hours of work: Afternoon/Evening work - Wednesday to Sunday, 2:30 pm to 9:30 pm

What You Bring

• Minimum 3 years’ experience in a restaurant or hospitality manager role (evening service essential).

• Current RSA Manager certification (or ability to obtain immediately).

• A love for wine and cocktails — you know your regions, varietals, and pairings, and you’ve probably got a favourite WA producer or two.

• Strong knowledge of WA wineries and the local drinks scene — we want to champion local, and you’ll help lead that.

• A leader’s mindset — you’re proactive, hands-on, and thrive when you’re running the floor.

• Solid understanding of service flow, guest experience, team motivation, stock control, and compliance.
