Job summary:
As a Pastry Cook, you will be responsible for preparing a wide variety of high-quality pastry items, including breakfast pastries, desserts, cookies, cakes, pies, and biscuits. You will also create eye-catching display pieces, centrepieces, and fulfill special order requests.
You will be responsible for mixing and baking ingredients using a strong understanding of ingredient properties and baking processes. You will produce a wide range of high-quality baked goods, including breads, rolls, baguettes, brioche, and various types of sourdough.
Key Responsibilities
· Prepare a diverse range of pastries, desserts, cakes, cookies, pies, biscuits, and breakfast items in accordance with standardised recipes and production schedules.
· Accurately weigh, measure, mix, knead, and mould doughs and batters for both traditional and contemporary pastry products.
· Create a variety of pastry fillings, glazes, creams, and decorative finishes to ensure consistent quality, taste, and texture.
· Monitor baking processes, including oven temperatures and timing, to produce high-standard baked goods.
· Decorate and finish products with attention to presentation, consistency, and customer expectations.
· Produce custom orders, including display pieces and centrepieces, as required.
· Maintain cleanliness and hygiene across all pastry preparation areas in line with food safety and workplace health standards.
· Assist with ordering and stock control of ingredients and pastry supplies to ensure uninterrupted production.
· Collaborate with other kitchen staff to coordinate daily pastry output and service timelines.
· May assist in the packaging and presentation of finished goods for retail or wholesale distribution.
Requirements:
· Relevant qualifications such as Certificate IV in Patisserie and a Diploma in Hospitality Management.
· At least 2 years of hands-on experience in a commercial pastry kitchen or patisserie setting.
· Proficiency in a range of patisserie techniques, including mixing, baking, decorating, and preparing creams, glazes, and fillings.
· Strong attention to detail and the ability to produce visually appealing and high-quality desserts.
· Ability to manage multiple tasks while maintaining efficiency and precision under pressure.
· Availability to work across varying shifts, including early mornings, late evenings, weekends, and public holidays.
· Strong interpersonal skills and the ability to contribute to a collaborative team environment.
