Greta is part of the For The Love Hospitality group, a passionate and experienced group, run by sibling duo, Adam and Elisa. Other venues include Elio's Place and Maverick, all located in the Melbourne CBD.
Greta is a European food and wine bar, serving a petite breakfast, lunch and dinner menu, aperitivo and curated wine list Monday to Friday with dinner service from Wednesday to Friday. We close on weekends and public holidays.
About the role
We are seeking a hands on, dynamic and experienced individual to join us as Head Chef. You will work closely with and report to the company executive chef. Our head chef will manage culinary operations on a daily basis, oversee all aspects of the kitchen, lead the team by example through menu development, food preparation and presentation, ensuring highest standards of quality and consistency.
Key responsibilities
Leadership: Provide guidance and direction to foster a collaborative work environment, promoting creativity, teamwork and professional development. Manage staff performance through supervision, training and development.
Menu design: Collaborate with the group Executive Chef to design seasonal menus and specials showcasing local ingredients and European culinary trends.
Operations: Oversee food preparation and service to ensure quality and consistency in every dish. Manage rosters and inventory so as to minimise waste and control costs. Collaborate with the group executive chef to achieve financial budgets and targets.
Community: Cultivate a sense of community at Greta; work closely with all departments to deliver memorable dining experiences and a positive, cohesive team culture.
Compliance: Ensure compliance with food safety standards, occupational health and safety, and industry best practices.
Skills & Experience
At least 1 years proven experience as a Head Chef in a similar setting.
Knowledge and passion for European food trends.
Strong communication and leadership skills that motivate and inspire a high performing kitchen team.
Excellent culinary skills and an eye for detail, a creative mindset and passion for offering exceptional food that considers contemporary trends.
Ability to adapt, multitask, and prioritise while executing smooth service in a fast paced setting.
Organisational & administrative expertise: proven experience managing inventory and food and labour budgets, preparing rosters, identifying ideas for growth, and reporting to key stakeholders.
Sound knowledge of food safety, and occupational health and safety standards.
