Opening its doors in June, Blackbird Melbourne will be a sophisticated sanctuary across three levels. Embracing a contemporary aesthetic with rich, contrasting textures and a warm, inviting ambiance, our venue invites guests into an intimate cocktail bar on street level, complete with a sunken lounge for a tranquil escape from the bustling city.

A central staircase adorned with a striking chandelier leads to a multi-story experience. Level 1 features a split-level dining room, offering both an expansive mirrored-ceiling dining space and a more secluded area with deep charcoal tones. Ascend further to discover private dining rooms and function spaces, each designed to cater to every occasion.

Opportunity

We're seeking an exceptional Sous and Junior Sous Chef to lead our vibrant team in launching Blackbird Melbourne! This role offers a rare chance to drive the creation and debut of our innovative restaurant concept, working closely with our Head Chef and Melbourne-born Executive Chef, Jake Nicolson.

In this pivotal role, you’ll help shape the culinary identity of this exciting venue, you'll drive kitchen operations, crafting creative menus inspired by local flavors, featuring a solid fuel cooking line, dry-aged meats, exquisite seafood, and seasonal botanicals sourced from local artisans. It's a culinary adventure celebrating Victoria's dynamic food scene. Your leadership will drive the planning, organisation, and execution needed to deliver an exceptional dining experience and build a cohesive, high-performing team.

Your Role

As Sous Chef or junior Sous, you’ll be the backbone of our kitchen operations, ensuring top-tier food quality, smooth service, and a vibrant, collaborative team environment. Your responsibilities will include:

Assisting the Head Chef in kitchen setup, food prep, and plating.

Leading the team with weekly rosters, training, and mentoring.

Managing inventory, food orders, and ingredient quality.

Innovating recipes and catering to diverse dietary needs.

Maintaining high standards of kitchen safety and compliance.

Contributing to the creation of an unforgettable dining experience.

What You’ll Bring

At least 2 year of experience in a similar environment.

Expertise in cooking methods, ingredients, and industry best practices.

A proven track record of kitchen and staff management.
