About the role

Ishizuka is seeking an experienced Sous Chef to join our dynamic culinary team at our prestigious restaurant located in the heart of Melbourne. As Sous Chef, you will play a pivotal role in supporting the Head Chef & Executive Chef and overseeing the day-to-day operations of the kitchen. This is a full-time position based in our Melbourne CBD restaurant.

What you'll be doing

Assist the Head Chef and Executive Chef in menu planning, recipe development, and kitchen management

Supervise and coordinate the kitchen team, delegating tasks and ensuring consistent high-quality food preparation

Maintain strict adherence to health, safety, and hygiene standards

Liaise with front-of-house staff to ensure seamless service

Contribute to the ongoing improvement and innovation of our culinary offerings

Foster a positive and collaborative team environment

What we're looking for

Minimum 3-5 years of experience as a Sous Chef or in a similar role within a high-end restaurant or hospitality setting

Strong knowledge of Japanese cuisine and techniques, with the ability to work with traditional and modern culinary approaches

Excellent communication and leadership skills, with the ability to motivate and guide a team

Demonstrated ability to work well under pressure and in a fast-paced environment

Passion for using high-quality, locally sourced ingredients to create exceptional dining experiences

Relevant culinary qualifications or certifications
