About the Venue

The Gladstone Hotel – known as The Gladdy – is reopening under new ownership with a fresh direction and strong community focus. We are currently seeking a Sous Chef and a Chef de Partie to join our team as we build a food-led venue that reflects our values: quality, professionalism, and local pride.

The Gladdy is being redeveloped into a vibrant, multi-faceted venue featuring:
- Café – Open now, Wednesday to Sunday
- Public Bar & Accommodation
- Dining Rooms & Events

With no gaming on-site, our focus is firmly on seasonal food, boutique beverages, live music, and community connection.

Available Roles

Sous Chef
- Support with menu development across all service periods
- Maintain kitchen standards, food safety and cost control
- Assist in staff training and team development
- Work closely with the Head Chef and senior team on operations

Chef de Partie
- Run your section with consistency and professionalism
- Deliver high-quality dishes in a fast-paced environment
- Maintain hygiene and prep standards
- Be a reliable and engaged member of the kitchen team

What We’re Looking For

- Proven experience in similar roles
- Passion for fresh, seasonal Australian cuisine
- Strong communication and teamwork
- Professional attitude and desire for long-term career development
