The Melbourne Cellar Door is one of the top destinations in Melbourne’s South Wharf precinct for wine, craft beer, and food enthusiasts.
The business opened in March 2018 as a wine bar and function venue. In early 2023, Dukes Distillery was set up within the venue, distilling small batch gin & vodka.
Melbourne Cellar Door is in the search for an experienced full-time sous chef to join our friendly team.
The roles and responsibilities of the sous chef are:
Assist head chef in daily operation of the kitchen
Lead BOH team in absence of head chef
Meeting with head chef and managers to discuss kitchen operation
Ensure effective and efficient operation of the kitchen
Ensure consistency of food quality and presentation
Prepare seasonal menus and specials
Prepare and cook food as required
Provide training to kitchen staff on cooking procedures and techniques
Inventory, ordering and cost control
· Check ingredients for freshness and quality
· Ensure the kitchen is clean, hygienic, and food safety compliance requirements are met
Qualification and experience required:
Undertaken formal training as a chef
3 year of experience working as a chef at a reputable establishment
Worked as sous chef or leadership role for at least one year
Ability to work collaboratively with the team and demonstrate techniques
Hands on experience in kitchen financials and cost control
Have worked alongside head chef to develop the team productivity
Energetic, creative, and passionate about food
Solid knowledge of food safety, hygiene, HACCP and workplace health and safety legislation and regulation
