The Chef de Partie will work closely with the Executive Chef and Head Chefs to deliver an outstanding dining experience that reflects the essence of the restaurant’s ethos. This position is ideal for a seasoned culinary professional who thrives in a dynamic, fast-paced environment, and has a deep appreciation for modern Australian cuisine.
Key Responsibilities:
Quality Control: Oversee the preparation, cooking, and presentation of all dishes from their section to ensure they meet the restaurant’s standards. Ensure consistency in every dish served, and adhere to recipes and portion control guidelines.
Health & Safety Compliance: Ensure that all kitchen operations comply with local health, safety, and hygiene regulations. Maintain a clean and safe work environment at all times.
Service Excellence: Lead by example during service, ensuring a high level of professionalism and focus during busy periods. Work efficiently to ensure food is delivered in a timely manner without compromising quality.
Collaboration & Communication: Foster strong communication within the kitchen team and with front-of-house to ensure a seamless and exceptional dining experience for guests.
Requirements:
Experience: Minimum of 5+ years of experience in high-end fine dining kitchens, with at least 2 years in a Chef de Partie position. Experience working in Michelin-starred or 3-hat restaurants is highly regarded.
Passion for Sustainability: A strong understanding and passion for sustainability in food sourcing, particularly with seafood.
Advanced Culinary Skills: Exceptional knife skills, food knowledge, and proficiency in all areas of kitchen operations. The ability to work under pressure while maintaining a high level of attention to detail.
Commitment to Excellence: An unwavering commitment to excellence in both food quality and service standards, with a keen eye for detail and a dedication to the craft.
Culinary Qualifications: Trade qualification in cookery or equivalent formal culinary education is preferred.
Desirable:
Experience working with Australian native ingredients and sustainable practices.
