Bar Liberty, one of Melbourne's most respected wine bars and restaurants in Fitzroy, is seeking a talented and passionate Pastry Cook to join our dedicated kitchen team. You will be an integral part of our team, responsible for executing a diverse range of exquisite pastries and desserts. Your role involves collaborating with a team of skilled pastry professionals, working with production schedules, maintaining high standards of hygiene and safety, and continuously monitoring techniques, ingredients and the final product.

Our dessert program is an essential component of our dining experience, and we're looking for someone who can elevate it further with creativity and technical skill.
The Role:
Create and execute dessert and pastry items that complement our entire food and wine program
Work closely with the Head Chef to ensure cohesion across the entire menu
Oversee the pastry team to ensure they are executing dishes and pastry items of a high standard
Contribute to menu development and special events
Ensure appropriate baking techniques are being used to maintain quality, consistency, and company standards.
Conduct regular quality checks on raw materials, ingredients, dough, and finished products, making necessary adjustments to ensure consistency and excellence
Maintain high standards of food safety, hygiene and kitchen organisation
Oversee, manage and report on faulty equipment, ensuring timely repairs and compliance with health and safety regulations
Ensure that all records of cleaning schedules and hygiene regulations are updated and maintained
Required Skills & Experience:
Minimum 3 years' experience as a Pastry Cook in a high-quality restaurant environment
A formal qualification in patisserie or commercial cookery is preferred; however, extensive relevant experience may be considered in lieu of formal training.
Strong technical pastry skills and knowledge of classical techniques
Creative approach to seasonal, produce-driven desserts
Excellent time management and organizational skills
Ability to work effectively under pressure in a fast-paced environment
Knowledge of or interest in wine pairing is advantageous
