About the Opportunity
We’re seeking passionate and talented Chef de Partie candidates to join our kitchen team at Byblos. In this role, you’ll bring bold flavors to life, craft dishes that delight, and mentor the next generation of culinary stars—all within an environment that celebrates innovation and teamwork.
Located on the scenic riverfront at Portside, Hamilton, Byblos invites you to explore rich flavors and traditions in a setting that blends ancient history with modern sophistication.
Our recent renovations have redefined Byblos, but the traditional warmth and exceptional hospitality remain at the forefront. The food combines the finesse of contemporary culinary techniques with a rich history.
Your Role
As a Chef de Partie, you’ll take ownership of a kitchen section—whether it’s pastry, meat, fish, larder, or hot mains—ensuring flawless preparation and execution. Reporting to the Head Chef, you’ll also work closely with the Sous Chef and Senior Chef de Partie to:
- Prepare and present high-quality dishes with creativity and precision.
- Manage your section’s daily operations, ensuring efficiency and cleanliness.
- Oversee stock control, portioning, and cost management to maintain quality and reduce waste.
- Mentor junior team members, including Commis Chefs and Apprentices, fostering their growth.
- Uphold safety and sanitation standards, contributing to a safe and organised kitchen.
- Support in recruitment and training to build a cohesive, skilled team.
What You’ll Bring
To thrive in this role, you’ll need at least 2 years of experience in a similar environment, along with:
- Expertise in cooking methods, ingredients, and specialised techniques.
- Strong leadership and team collaboration skills.
- A passion for culinary innovation and the ability to adapt to modern trends.
- Knowledge of sanitation and safety standards.
- A positive attitude and readiness to contribute to a high-performing team.
