Executive Chef – Avli Restaurant & Bar & Food Truck

Avli Restaurant & Bar, along with our popular food truck, is looking for an experienced and creative Executive Chef to take charge of our kitchen operations. This is a fantastic opportunity to shape our menu, lead a talented team, and drive excellence in both our restaurant and mobile catering services.

About the Role

As our Executive Chef, you will be responsible for:

• Complete kitchen cleaning protocols.
• Monthly in-house food health and safety audits.
• Compliance with all food safety regulations.

• Menu and recipe development, focusing on seasonal hero dishes.
• Costings and budget management to ensure profitability.
• Hiring, training, and leading kitchen staff.
• Overseeing service operations from Wednesday to Sunday.
• Stock and inventory management, ensuring efficiency, minimising waste, and maintaining supply levels.
• Quality control and presentation, guaranteeing that every dish meets the highest standards before leaving the kitchen.
• Attending weekly management meetings to align on strategy, targets, and kitchen performance.
• Coordinating operations across both the restaurant and food truck.
• Ensuring strict adherence to food safety and hygiene standards, including:
• Creating and managing staff rosters based on business needs.
• Overseeing catering functions and private events.

What We Offer

• $90,000 - $110,000 per annum + Super
• 40-45 hours per week

What We’re Looking For

• Proven experience as an Executive Chef or Head Chef in a high-volume restaurant.
• Strong leadership skills with the ability to build, mentor, and motivate a team.
• A solid understanding of cost control, stock management, and food wastage reduction.
• A passion for creating outstanding dishes that showcase Traditional Greek Cuisine.
• Excellent organisational and time-management skills.
• A commitment to maintaining the highest food safety standards.
