The Redbrick Hotel is in the Brisbane area and boasts a distinctive charm and features an a la carte seafood restaurant providing full table service in a relaxed yet professional atmosphere. We have a exciting opportunity for a dynamic and motivated Senior Sous Chef who possesses the skills and experience of working with a variety of seafood.
Key Responsibilities
- Leadership - assist the Head Chef in leading the team and by example
- Contribute to the design of our menu and add your creative skills to our specials board
- Operations - a hands on role that includes food operations, training, compliance and monitoring kitchen safety standards
- Available to work nights and weekends
Skills & Experience
- Minimum of 3 years experience in a restaurant or bistro
- Excellent communication and leadership skills
- Knowledge of modern Australian cuisine…. especially fresh seafood
- Filleting of whole fish
- Excellent culinary skills and an eye for detail
- Sound knowledge of food safety standards
- Strong organisational and time management skills
- Eligible to work in Australia on a full-time basis
