Farmer's Daughters is a multi-level restaurant and bar in the Melbourne CBD.

We offer farm to table dining with a focus on Gippsland produce and sustainability.

Each level offers a slightly different experience, from casual fast paced A la carte cooking in the deli, wood and charcoal fired set menus in our hatted restaurant to a rooftop cocktail bar with an amazing back- bar of all Australian spirits.

About the role

This hands-on role is perfect for an experienced Jr Sous Chef, ready to take the next step in their career. You will have the opportunity to showcase your culinary skills and develop your managerial capabilities. Such as:

Adhering to food production and presentation standards, service procedures and service times.

Creating new menus, recipes, and ways of improving consistency, product, revenue performance and the overall smooth operation of the kitchen.

Running the pass during services,

Evolving systems for stock control, stock rotation and food storage that will be viewed by the local health officer as being of excellent standard.

Maintaining and controlling staff performance standards, food production and presentation standards, service procedures and service times as defined by the executive Chef.

Producing costed rosters

Following food cost and wage cost KPI targets

Seeking from the Sous Chef and Head chef, what exactly is expected of them (job description), how to do it (training) and how they will be judged (performance appraisals)

Prepare order lists for all food items relevant to section and monitors the quality of food items received daily.

Conducting timely and accurate stock takes every 4 weeks.

Ensuring the timely production of accurate costed rosters in the kitchen as directed by the company

Give clear instructions upon commencement of shift to team members to ensure the shift goes smoothly and effectively.

Continually looks for opportunities to develop better training for kitchen staff.

Learn new skills and advance your career with structured training, support, and professional development within an established Hospitality Group.

Enjoy great rostering flexibility. We will be open seven days a week for lunch and dinner.

About you

This is the perfect role for someone who will relish the opportunity to contribute, share their knowledge, and have genuine input and influence in a large, professional and experienced team as Jr sous Chef.

We are looking for someone with at least 1 year full time work experience in a similar role.

Also our ideal candidate will have to have certificate IV and advance Diploma in Hospitality managment.
