About the Role:
As Head Chef, you will lead the culinary team, shaping the menu, overseeing kitchen operations, and ensuring the highest standards of quality, flavour, and presentation. Working closely with the Front of House team, you will help create an unforgettable dining experience that perfectly aligns with The Sundays’ ethos.

Key Responsibilities:

  • Lead and inspire a team of chefs, fostering a culture of excellence, creativity, and teamwork.
  • Develop and execute an innovative menu that reflects The Sundays’ unique culinary identity.
  • Ensure all dishes meet the highest standards of quality, presentation, and consistency.
  • Oversee kitchen operations, from food preparation and stock management to budgeting and supplier relationships.
  • Maintain impeccable kitchen hygiene, safety, and compliance with food regulations.
  • Train and mentor kitchen staff, building a strong, cohesive team.
  • Collaborate with the Front of House team to create a seamless, memorable guest experience.

What We’re Looking For

  • Culinary qualification or equivalent experience, with a strong background in fine dining.
  • Proven experience as a Head Chef or Senior Sous Chef in a high-end restaurant.
  • Passion for exceptional food, innovative flavours, and seasonal ingredients.
  • Strong leadership skills with the ability to mentor and inspire a team.
  • Ability to manage a fast-paced, high-performing kitchen with precision.
  • Knowledge of food safety, hygiene, and compliance standards.
  • A creative mindset, ready to contribute to menu development and elevate the dining experience.
  • Adaptability and a calm, problem-solving approach to the unique challenges of an opening team.

History

From its original settlement by the Ngaro Aboriginal tribe, to its visit by Captain Cook in 1770, and evolution as a tourist destination in the 1970s and 1980s, Hamilton Island has had a long and interesting history. The island was purchased by renowned Australian winemaker, Bob Oatley, in 2003, and since, has become one of the world’s leading holiday destinations.

Environment

While there is an abundance of restaurants, bars and resorts on Hamilton Island, only a third of the island is developed - meaning the rest remains in its pristine, natural state. There are more than a dozen walking trails through which guests can explore the island.

Infrastructure

Every year, the Oatley family invests millions of dollars in improving the accommodation, infrastructure and services available on Hamilton Island.
