Be part of the opening team at The Sundays, a luxury boutique hotel designed for families, and work alongside award-winning chefs Josh and Julie Niland, renowned for their three-hatted Sydney restaurant, Saint Peter.
As Sous Chef, you’ll play a key role in delivering their innovative culinary vision, supporting the Head Chef in leading the kitchen team and ensuring an exceptional dining experience in a setting that blends laid-back luxury with warm, family-friendly hospitality.

About the Role
As Sous Chef, you will be a vital part of the culinary leadership team, working closely with the Head Chef to maintain the highest standards of food quality, consistency, and presentation. You’ll help oversee kitchen operations, mentor junior chefs, and ensure seamless service in this exciting new venue.
Key Responsibilities:
- Support the Head Chef in menu execution, kitchen operations, and team leadership.
- Assist in menu development, ensuring dishes align with The Sundays’ unique culinary identity.
- Supervise and mentor junior kitchen staff, fostering a culture of excellence and collaboration.
- Ensure high standards of food quality, consistency, and presentation.
- Oversee stock management, ordering, and supplier relationships.
- Maintain strict compliance with food safety and hygiene regulations.
- Work closely with the Front of House team to ensure a seamless dining experience.
What We’re Looking For
- Culinary qualification or equivalent experience in fine dining.
- Experience as a Sous Chef or Senior Chef de Partie in a high-end restaurant.
- Strong culinary skills and a passion for creating exceptional food.
- Leadership ability with experience mentoring and developing junior chefs.
- Knowledge of food safety, hygiene, and compliance standards.
- Adaptability, problem-solving skills, and a calm approach in a fast-paced environment.
- A passion for delivering memorable dining experiences in line with The Sundays’ ethos.

About Hamilton Island Enterprises

From its original settlement by the Ngaro Aboriginal tribe, to its visit by Captain Cook in 1770, and evolution as a tourist destination in the 1970s and 1980s, Hamilton Island has had a long and interesting history.
