Ace Hotel Sydney is our first-ever spot in Australia, set in the verve of Surry Hills. Inspired by the neighborhood’s vibrant rhythm, Ace Sydney is home to a bustling public Lobby alive nearly nightly with DJs and performers, a rebellious art program and sunken lounge just off the Lobby bar. We’ve also got three distinct restaurants led by award-winning culinary pros, including our 18th-floor restaurant-and-bar Kiln; our oasis for fresh, seasonal fare called LOAM; and a day-to-night laneway cafe, Good Chemistry. Now all we need is you.

About the Role

Ace Hotel Sydney is seeking a dynamic and experienced leader to oversee our Food & Beverage Operations department. In this role, you will be responsible for driving revenue across all F&B outlets, ensuring exceptional service standards, and maintaining profitability through effective cost management. Working closely with the General Manager, and outlet managers, you will play a key role in shaping the overall F&B experience. From refining service operations to monitoring payroll and exceeding forecasted targets, your leadership will be instrumental in maintaining a high-performing and guest-focused environment.

Beyond operations, you will also oversee beverage programs, supplier partnerships, and inventory control, ensuring our product offerings align with Ace Hotel Sydney’s brand and values. You will collaborate with marketing and sales teams to develop promotions, enhance guest engagement, and maximise revenue opportunities. Additionally, this role requires strong financial acumen to manage budgets, analyse sales reports, and implement strategies that optimise cost efficiency. With a hands-on approach and a commitment to continuous improvement, you will elevate the overall guest experience and set new standards for excellence in hospitality.

About You

You are a results-driven hospitality professional with a passion for food, and beverage, and delivering memorable guest experiences. With a strong background in F&B leadership, you have the ability to inspire and develop teams, ensuring that service excellence is at the core of operations. You thrive in a fast-paced environment, balancing operational oversight with strategic planning to meet and exceed business goals. Your ability to foster a positive and motivated team culture sets you apart, and you are committed to training, mentoring, and guiding staff to perform at their best.

In addition to leadership, you have a deep understanding of cost control, compliance, and industry regulations. Your experience with budgeting, forecasting, and payroll management allows you to make informed decisions that support the hotel's financial objectives. A strong knowledge of beverage programs, supplier negotiations, and stock management is essential, along with the ability to collaborate with cross-functional teams. Holding a valid RSA and Food Handler’s certificate, you are ready to take on a role where your expertise, creativity, and strategic mindset will help shape the future of Ace Hotel Sydney’s F&B offerings.
