The Gladstone Hotel in Stockton, Newcastle aka ' The Gladdy' is reopening late Summer 2025 with new ownership, and a totally different vibe.
This beautiful old girl will be home to a cafe, public bar, bottle shop, dining rooms, event spaces, and accommodation.
We are looking for an experienced and driven Head Chef to drive creativity, leadership, and energy into what we believe has the potential to become a Newcastle institution.
So, about the new Gladdy.
We've pulled out the gaming and wagering, and are leaning in on the food and beverage program, community focus, live music and of course, sports.
Our food narrative is contemporary Australian and, will always be based on the best possible local, domestic, and sustainable produce in season.
The beverage programming will be more boutique and independently geared.
An Australian-forward product range will be our angle.
Stage 1: Cafe. Just softly opened.
We're starting with Wednesday- Sunday, and a small, fast & fresh menu.
Stage 2:
Public bar & accomodation. End of March 2025. Friday - Sunday to start.
Stage 3:
Dining rooms and events spaces. Following ASAP from stage 2.
You will need to possess the following skills:
- Menu Creation & Recipe Development - Design and execute an exceptional on-trend menu, with a focus across breakfast, lunch, dinner, bar & event menus.
- Supplier Relations & Sourcing - Establish and maintain relationships with top-tier suppliers to ensure only the finest produce and ingredients are used.
- Recruitment & Onboarding - Hire, train, and lead a top-performing kitchen team, ensuring a smooth opening and long-term success.
- Training & Development - Mentor and develop the incoming team, instilling a culture of excellence, consistency, and professionalism.
- Operational Leadership - Implement and uphold best practices in food safety, cost control, and kitchen efficiency.
- Collaboration & Innovation - Work closely with senior management, front-of-house teams, and suppliers to deliver a seamless and outstanding dining experience.
- Quality Control - Maintain the highest culinary standards, ensuring consistency across every dish that leaves the pass
- Proficient in hospitality tech platforms for wages, COGS, compliance, and forecasting control.
We are looking for longevity in this team and, are open to sponsor the right candidate and/or an accommodation package, if required.
