We are looking for a full-time butcher with solid knowledge and experience in cutting meat
The successful applicant will work and responsible for daily production management including:
• Daily preparation for production service • processing meats including cutting, trimming, portioning and weighing accordingly. • Inventory Control & Meat Costing Management • Maintain standards for meat storage, rotation, quality, and appearance. • Ensure compliance with NSW food safety regulations. • Supervise preparation, cutting and meat presentation • Provide input in the development of new line items • Schedule staff and assist in human resource processes as needed including induction for new staff for the prodiuction team & training etc.
The job will be full time, with work hours open for negotiation and depending on workplace requirement.
Successful applicants must have: • Demonstrated knowledge of techniques and practices in butchery • Strong leadership abilities • Ability to work in a high-pressure environment • Excellent knife-handling skills Education and Experience Requirements: • Formal culinary training / culinary degree or equivelant • Minimum 2 years’ experience as a butcher • Previous production management experience
