About the role

We are looking for a talented Restaurant and In Room Dining Manager to drive and develop the team to perform at a World Class level. The individual will be accountable for the entire operations of the Restaurant, Pascale Bar & Grill and IRD. The individual will take responsibility in driving the financial outcome of their allocated department/s – Wages, COGS, Expenses, maintenance, & overheads.

The Restaurant and IRD Manager will assist in the overall responsibility for managing operational and staffing requirements for department, maintaining the highest of standards at all times. They will implement regular trainings and ensure thorough inductions for new employees are complete.

Specific Responsibilities

Lead overall accountability for the people, product, service, and maintenance standards across the Restaurant and In-Room Dining departments.

Continually review and evaluate the performance of the restaurant and IRD operations, with a strong focus on wine service and dinner execution, ensuring alignment with business objectives and delivering strategies to drive performance.

Partner with the F&B, Sales, and Marketing teams to develop and activate business initiatives, exploring new opportunities through research, innovation, and early activation strategies.

Support the F&B Director with end-to-end people management, including recruitment, onboarding, training, coaching, and rostering, to ensure exceptional service delivery and team engagement.

Oversee the effectiveness and accuracy of internal systems and POS platforms (Infrasys, 7Rooms), ensuring smooth operations and data integrity.

Manage departmental financial performance by monitoring and controlling wage costs, beverage costs, maintenance, and other expenses, delivering results in line with budgeted revenue and profit targets.

Skills & experience

Demonstrated experience in a similar role as a restaurant or assistant restaurant manager

Previous Hotel experience is a bonus

The ability to work under pressure in a busy and dynamic restaurant

Passion for culinary excellence

Experience with silver service is not necessary but is recommended

Excellent presentation and exceptional communication skills

Experience leading and training a high performing team

Sound knowledge of current food trends

A solid understanding of wine and service
