We’re looking for Breakfast Chef (Full-Time) to join our pre-opening team—people who bring energy, passion, and a commitment to quality to every plate. You’ll be the heart of the morning experience, delivering fresh, flavour-forward breakfasts that set the tone for our guests’ day. In this role, you’ll work mostly independently to prepare and present our breakfast menu with care and consistency, while collaborating with the kitchen team to support a vibrant, welcoming atmosphere.

About the Role

We are seeking a committed and passionate Breakfast Chef to join our culinary team at Caption by Hyatt Sydney. This is an independent role where you will take ownership of the breakfast section, ensuring consistently high standards of preparation and presentation that reflect our bold, flavour-forward approach. On weekdays, you will primarily work solo with support and guidance from the Head Chef as needed. During busy periods, including weekends, you will be assisted by a Commis or Cook.

Some Key Responsibilities

· Prepare, cook, and present all breakfast dishes to consistently high standards

· Set up and maintain à la carte service, ensuring freshness and visual appeal

· Operate the breakfast section independently on weekdays, managing all aspects of production, cleaning, labelling, and mise en place

· Work closely with the Head Chef, who provides guidance and support during preparation and service

· Supervise and provide direction to a Commis Chef or Cook during peak periods (e.g., Friday to Sunday)

· Assist with preparation and service of other sections outside breakfast times as required

· Support stock control by monitoring ingredient levels and advising the Head Chef of ordering needs

· Uphold strict hygiene, food safety, and sustainability standards at all times

· Contribute to a positive, inclusive kitchen culture aligned with Caption by Hyatt’s purpose and values

About You

· Previous experience as a Breakfast Chef or Demi Chef in a hotel or busy restaurant kitchen

· Certificate III in Commercial Cookery (or equivalent)

· Confident working independently with minimal supervision

· Strong time management and organisational skills

· Sound knowledge of safe food handling and HACCP requirements

· Positive attitude and passion for fresh, locally inspired food

· Flexibility to work early morning shifts, including weekends

· Experience with Asian cuisine or Asian-inspired menus will be highly regarded
