What you'll be doing...

As Bar & Lounge Manager, you’ll take the lead in overseeing all aspects of Altus Rooftop Bar & Lounge, from service delivery to team performance, product innovation, and guest engagement. You’ll be the face of the venue – a confident, charismatic leader with a deep passion for hospitality, an impeccable eye for detail, and a commitment to delivering world-class experiences in every glass and interaction.

You will lead a talented team of mixologists, hosts, and service professionals, inspiring them to bring creativity, warmth, and excellence to every shift. From curating seasonal cocktail menus to hosting exclusive events, this is a unique opportunity to elevate one of Melbourne’s premier rooftop venues.

Key Responsibilities:

Lead daily operations at Altus Rooftop Bar & Lounge, ensuring seamless, luxurious service and an exceptional guest journey

Mentor, train, and develop a passionate team of bar and floor staff, fostering a culture of excellence, elegance, and engagement

Maintain a deep knowledge of wine, spirits, cocktails, and food pairings, with the ability to inspire guests and staff alike

Collaborate with the Executive Chef and F&B leaders to design innovative menus, signature drinks, and seasonal offerings

Ensure the atmosphere, ambience, and service standards consistently reflect the sophistication and uniqueness of the MGallery brand

Manage labour costs, beverage stock, supplier relationships, and compliance with RSA and food safety standards

Drive revenue through strategic promotions, upselling initiatives, and events that attract both in-house guests and external clientele

Handle guest feedback with professionalism and care, turning challenges into opportunities to exceed expectations

What we’re looking for...

Proven experience in leading premium or luxury bar/lounge operations, ideally within a hotel or high-end venue

A polished, professional presence with strong leadership and interpersonal skills

Expertise in mixology, wine, and beverage service, with a flair for curating unforgettable guest experiences

Passion for team development, with the ability to inspire, mentor, and elevate performance

Commercial acumen, with experience in budgeting, forecasting, and driving venue profitability

A calm and composed approach, even in high-pressure, fast-paced environments

A creative, detail-oriented mindset and a deep understanding of the luxury hospitality space
