Due to our current Head Chef taking a role in our sister Restaurant, Redmanna Waterfront Restaurant is seeking a Experience Head Chef with Drive and Passion to help rebrand and redirect the Redmanna's Brand

Specialising in local seafood and local produce Redmanna is situated on the Mandurah Waterfront.

We are looking for someone that has been working in similar role currently as a Sous Chef or Head Chef looking to share their skills and craft in a refined dinning environment.

Redmanna requires you to be passionate about hospitality and the produce that we serve with an eye for detail and a good sense of humor.

Head Chef

Working with a small team Chefs and apprentice Chefs you will be required to have knowledge of all facets of the kitchen and its operations including but not limited to-

ensuring set percentages are meet with COGS and Kitchen wages.

Maintaining Food and Wage percentages

Kitchen rostering.

Performing Stock counts and ordering stock

Ensure quality of food at all times.

Ensure all Kitchen staff are trained the same standard.

Planning menus and costing of items at least 4 times per year.

Planning weekly specials and monthly events

Making Sure that your team follow their job descriptions

Liaising with suppliers for price and produce.

Maintain proper portioning of all foods correctly

Eye for detail.

To train and monitor other kitchen staff including apprentices

The position we are looking for is full-time. You will require Initiative, good skills and lots of energy for this fast-paced roles. Redmanna trades for lunch Wednesday - Sunday and dinner from Wednesday-Saturday, specialising in Smart Casual dining.
