SOUS CHEF – Marina Tavern
The Marina Tavern is a colonial-style venue featuring a restaurant and bar, offering the ideal environment for a Sous Chef to refine their culinary skills while contributing to creating the best in Australian pub food.
A popular destination for both Island guests and residents, the Tavern serves approximately 400-500 covers per night. This is an exciting opportunity for a passionate Sous Chef to support the Head Chef and the culinary team, delivering exceptional experiences for our guests through outstanding food and service.
The successful candidate will receive full support from our food and beverage management team, along with training on our ITC infrastructure and logistics operations.
Your Role
Working alongside the Head Chef and Executive Chef, you will play a vital role in delivering a dining experience that exceeds guests’ expectations, while supporting operational and financial goals.
You will also:
Assist with the creation and design of menus that reflect the culinary vision of the Tavern while ensuring guest satisfaction, cost effectiveness, and operational efficiency.
Monitor product quality, minimize wastage, and support inventory control to help achieve budgeted targets.
Ensure compliance with all statutory Australian Food Safety Standards, WH&S, and HIE standards, procedures, and processes.
Contribute to the development and maintenance of Standard Operating Procedures (SOP) to enhance kitchen operations and performance.
Support the leadership and development of a highly motivated, skilled team that consistently strives for excellence.
Assist with the recruitment, training, mentoring, and ongoing development of kitchen staff.
This full-time role is based on stunning Hamilton Island.

To succeed in this role, you will need:
Leadership skills: The ability to support and inspire a team, promoting a positive and efficient work environment.
Culinary experience: Proven experience in large-volume venues with a diverse range of cuisines.
Adaptability: Comfort in a fast-paced, dynamic environment, with the ability to handle changing circumstances and unexpected situations.
Communication skills: Strong communication and interpersonal abilities, both within the kitchen and with guests.
You will also have:
Certificate III in Commercial Cookery (Essential)
At least 3 years’ experience in a Sous Chef or similar kitchen leadership role (Essential)
Proven management skills and experience working with large teams (Essential)
Current Food Safety Supervisor Certificate (Desirable)
Experience in volume production kitchens
Proficiency in Microsoft Word, Excel, or equivalent

Every year, the Oatley family invests millions of dollars in improving the accommodation, infrastructure and services available on Hamilton Island.
