Be part of a sensational community culture leading the bistro team at The Petersham bowling club.

Grange Gully Bistro has been operating for 3 months and is seeking a creative and enthusiastic sous chef to lead the growing kitchen team in a fun and exciting venue. The bistro is buzzing with great food and a new seasonal menu with a capacity to sear +300 people.

The club holds events daily. Including live music, trivia, comedy, dark beer nights and film nights. And special events like wrestling on the green, medieval fair and monthly jumping castles. The Petersham bowling club is about community and we also reflect that in the menu. With ingredients also being used from our community garden.

The position will assist the Executive chef / owner in overseeing all aspects of the kitchen. Your responsibilities will include

  • Lead, train and mentor the kitchen staff during shifts.
  • Oversee day-to-day kitchen activities to ensure smooth and consistent food preparation and service.
  • Evaluate and review team performance, offering constructive feedback and guidance to foster their career advancement.
  • Support in overseeing kitchen budgets, managing food costs, and maintaining profitability while upholding our standards of quality.
  • Work with the executive chef to create and budget new seasonal menus

Our Ideal Candidate:

  • Demonstrates a passion for cooking and community and a strong understanding of kitchen management and operations.
  • Experience leading teams as a Sous Chef with a proven track record of success.
  • Strong knowledge of modern cooking techniques, food trends, and seasonal produce.
  • Shows a genuine interest in developing, nurturing, and training team members, with a focus on building their capabilities and confidence.
  • Is highly organised, responsible, and hands-on in the kitchen, with the ability to manage time effectively and delegate tasks.
  • Minimum 1-2 years’ experience in a similar role within similar venues or gastropubs.
  • Excellent organisational and time management skills, particularly in fast-paced environments.
  • Solid understanding of kitchen financials, including cost control and minimizing waste.
  • A proactive, solution-oriented attitude and commitment to continuous improvement.
  • Relevant culinary qualifications and current food safety certifications.
