About Us

The Sanderson & Eau de Vie, is a highly regarded fine-dining restaurant & bar, known for its commitment to exceptional cuisine, high-quality Australian ingredients, and a unique dining experience that leaves lasting memories with our guests. Our a la carte menu is inspired by our Earth, Land & Sea set menus with a strong focus on seasonal, locally sourced ingredients and our in-house dry-aging program.

We are now seeking a talented and experienced Head Chef to lead our kitchen, inspire our team, and take our culinary offering to the next level.

The Role

As our Head Chef, you will have full responsibility for the kitchen, overseeing all aspects of food preparation, team management, and menu innovation. You will work closely with the senior team, whilst reporting to the General Manager, to ensure the highest standards of quality, consistency, and creativity are met.

Key Responsibilities:

  • Menu Development: Create and execute innovative, seasonal menus that align with our brand and excite our guests to create truly “F*ck Yeah!” experiences.
  • Kitchen Leadership: Recruit, train, and mentor a team of chefs, ensuring a collaborative and motivated working environment where the team can “Evolve & Excel”.
  • Quality Control: Maintain the highest standards of food presentation, taste, and experience to ensure we are delivering a “Best for the Guest” experience.
  • Commitment to Excellence: Make sure that we are always looking to “Do the right thing” even if it’s hard. We look for integrity in all our decisions.
  • Financial Management: Control kitchen costs, monitor stock levels, rostering, ordering etc. Full responsibility of day-to-day running of the kitchens.
  • Efficiency & Compliance: Implement and maintain structured kitchen systems, ensuring smooth daily operations whilst all health & safety, and food hygiene processes are followed.

What We’re Looking For

The ideal candidate will be a passionate and experienced Head Chef who thrives in a fast-paced environment and has a strong grasp of modern culinary techniques, kitchen management, and business acumen whilst still being hands-on and leading from the front.

Essential Skills & Experience:

  • Proven experience as a Head Chef in a similar high-quality, busy restaurant.
  • Expertise in Modern Australian cookery, with a flair for creativity and innovation.
  • Strong leadership and team management skills, with the ability to train, mentor, and develop staff.
  • Excellent knowledge of food safety, hygiene regulations, and kitchen best practices.
  • Business acumen, with experience in cost control, stock management, and supplier negotiations.
  • Ability to work under pressure while maintaining exceptional quality and consistency.
  • Passion for sustainability, local sourcing, and innovative menu design.
