Now, we’re stepping into bold new territory with our first European-inspired restaurant, set to open in one of Sydney’s most iconic buildings at the heart of the CBD. After 13 years of perfecting Spanish cuisine, this venue will fuse the culinary brilliance of Europe’s grand cities—think France, Spain, and Italy—with a distinct Sydney flair. The Opportunity
We’re seeking an exceptional Head Chef to lead this ambitious venture, working hand-in-hand with our passionate owner to craft a world-class dining experience. This is your chance to leave a lasting mark on Sydney’s culinary landscape, heading a brand-new kitchen in a culturally significant venue that’s poised to turn heads.
Operating Hours: Monday to Saturday (closed Sundays) - 90 seats
Start Date: Employment begins 4 weeks prior to opening
The Role
As Head Chef, you’ll be the driving force behind a fine dining destination that’s as memorable as it is delicious. Your key responsibilities include: Designing an innovative menu inspired by France, Spain, and Italy, elevated with sophistication and a Sydney twist.
Building, training, and mentoring a fresh kitchen team, with support from the owner and our group’s Executive Chef during setup.
Leading operations with all-induction equipment (we’ve mastered charcoal ovens for years—now it’s time to switch things up!).
Ensuring impeccable quality and consistency in every dish that hits the pass.
Managing food costs, stock levels, and labour efficiency while collaborating with suppliers and management.
Partnering with front-of-house and senior leadership to deliver a seamless, standout dining experience.
Using tools like Restock to streamline stock control and kitchen financials.
