Located right on the Great Ocean Road in Anglesea with sweeping ocean views, we are a tight knit team with big plans for growth. We are seeking an experienced Sous Chef to help lead our kitchen and bring their passion to our vibrant ocean view restaurant.

Position:

We are searching for a passionate and driven Sous Chef who loves what they do and who wants to progress to our next Head Chef.

As our Sous Chef, you’ll work side-by-side with our Head Chef to ensure the smooth operation of the kitchen, overseeing daily food preparation, maintaining kitchen standards, and leading and developing the team to deliver exceptional dishes. This is a hands-on role that requires a blend of creativity, leadership skills, and a deep passion for food.

Key Responsibilities:

  • Kitchen Leadership: Assist in overseeing the day-to-day operations of the kitchen, ensuring all dishes meet our quality standards and are prepared to specification.
  • Menu Execution: Collaborate with our Head Chef to develop, refine, and execute current and new menu items.
  • Kitchen Management: Supervise, train, and mentor junior kitchen staff, ensuring smooth and efficient kitchen operations.
  • Quality Control: Ensure consistency of product with attention to detail in both the preparation and plating of dishes.
  • Inventory & Ordering: Assist with inventory control and ordering, ensuring that the kitchen is well-stocked with fresh ingredients and minimizing waste.
  • Health & Safety: Maintain a clean and organized kitchen, adhering to all food safety, sanitation, and health regulations.
  • Labour Management: Manage weekly rosters and reduce unproductive labour costs.
  • Collaboration: Work closely with front-of-house staff to ensure timely and accurate service of orders, and help manage communication between the kitchen and dining room.
  • Creativity & Innovation: Contribute to menu development and specials.

Requirements:

  • Proven experience as a Sous Chef.
  • An understanding of Asian cooking techniques, flavour profiles, and presentation styles is helpful but not required.
  • Exceptional leadership and team management skills.
  • Strong organizational and multitasking abilities in a high-pressure environment.
  • Ability to mentor and inspire the kitchen team.
  • Excellent communication skills to interact with both kitchen and front-of-house staff.
  • Passion for food.
  • Knowledge of health, safety, and food regulations.
  • Flexibility and willingness to work evenings, weekends, and holidays.
