The Colony Inn Hotel, Jerilderie, NSW, is seeking a skillful, enthusiastic and reliable chef to join our kitchen team.
The Colony Inn Hotel is a popular restaurant, bar and motel, located in a well serviced country town in the NSW Southern Riverina region.
The bistro restaurant operates lunch and dinner services, 6 days a week, and presently averages 350 covers weekly.
With an influx of renewable energy and other construction projects to our area, there are even busy times ahead and we want to be ready to meet this increased demand!
As such, we are seeking a qualified, experienced Chef to work for us full time.
This is a permanent position and the Salary offered is $73,000 to $74,000 per year.
Our menu fits with-in the "gastro pub" style, offering an extensive selection of Australian dining classics and international dishes, along with a weekly specials board that allows us to flex our talents.
We take pride in producing high quality food from scratch, integrating the best of our abundant local produce.
The successful candidate would have proficiency in all aspects of pub style cooking, with a particular emphasis on grill, pans and sauces, as well as the ability to cater to diners with food sensitivities/allergies.
Specialist skills in international cuisines or specialty dining would be an asset in this role.
You would be working closely with owner/manager, to enhance kitchen productivity and increase restaurant volumes.
This job represents a great opportunity for a chef looking to expand their repertoire or wanting to a rural "tree change".
Located beside the picturesque Billabong Creek, Jerilderie has a population of around 900.
Jerilderie is a 3.5 hour drive from Melbourne, 7 hours from Sydney and under two hours to the large regional cities of Shepparton, Albury, Wagga Wagga and Griffith.
The town has a supermarket, two primary schools, medical centre, hospital, football and netball club, tennis courts, golf course, bowling greens, swimming centre, 24 hour gym, library, waterskiing lake, walking tracks and plenty of fishing spots! A daily bus service operates to the local high school in Finley.
In summary, Jerilderie is a relaxed and safe country town, with excellent facilities and a great family-friendly lifestyle.
Chef's Duties
Pre-service preparation of all raw produce, cooking and portioning of bulk items (curries, stews, pie fillings etc).
In-service cooking of Meats, Fish, Poultry, Vegetables, Salads, Pasta, Rice and Desserts to order from an a la carte menu.
Preparing menu and budgets.
Creating weekly specials menu.
Formulating and cooking set menus for catered functions.
Producing quality meals with a high standard of presentation, that are nutritional and also within menu and budget guidelines.
Maintain stock levels of food products and resources.
Co-ordinate ordering of produce and resources.
Maintain clean and hygienic workplace.
Maintains OH and Safety regulations in workplace.
Moniter and record food storage temperatures.
Supervision, guidance and mentoring of kitchen support staff.
Qualifications and Experience
At least Certificate III in Commercial Cookery
Recognized Food Safety Supervisor Certification
At least two years experience working in a comparable restaurant.
