Minskys Hotel is a well-established pub and dining venue in Cremorne, known for delivering high-quality food in a lively and welcoming atmosphere. We are looking for a skilled Chef and Cook to join our team, assisting in all aspects of kitchen operations, from food preparation to service.

The Role

We are seeking both a Chef and a Cook to support our kitchen team. These roles require strong attention to detail, the ability to work under pressure, and a passion for delivering great food.

Key Responsibilities

Chef Responsibilities:

  • Menu Development & Costing – Assist in menu creation while managing food and labour costs.
  • Supplier Management & Ordering – Order ingredients, maintain stock levels, and manage supplier relationships.
  • Quality Control – Ensure consistency, presentation, and portion control across all dishes.
  • Team Leadership & Training – Supervise and train kitchen staff in cooking techniques, food safety, and kitchen procedures.
  • OH&S & Food Safety Compliance – Ensure compliance with hygiene, food handling, and workplace safety regulations.
  • Kitchen Operations & Efficiency – Oversee kitchen workflow, ensuring smooth service during peak hours.
  • Food Preservation & Storage – Ensure proper freezing, chilling, and preservation of ingredients and pre-prepared dishes, following food safety guidelines to maintain quality and reduce waste.

Cook Responsibilities:

  • Food Preparation & Cooking – Prepare and cook meals to the highest standard, ensuring portion control, seasoning food appropriately during cooking, and balancing flavours.
  • Portioning & Plating – Accurately portion food and present dishes attractively before serving to maintain consistency and quality.
  • Regulating Cooking Equipment – Monitor and regulate temperatures of cooking appliances to ensure food is cooked safely and correctly.
  • Correct Handling & Storage of Food – Ensure all ingredients are stored correctly to maintain freshness and comply with food safety regulations.
  • Menu Planning & Food Estimation – Assist in planning menus, estimating ingredient requirements, and preparing food quantities to meet service demands.
  • Assisting with Quality Control – Maintain consistency in food preparation, presentation, and portioning.
  • Support Kitchen Operations – Work closely with the Chef and team to ensure efficient food service.
  • Training & Leadership – Support and guide junior kitchen staff, assisting in training and maintaining high standards of food preparation and safety.

About You

  • Chef: Experience in menu planning, ordering, and leading a team.
  • Cook: Strong knowledge of food preparation, portioning, and cooking techniques.
  • Ability to work efficiently under pressure while maintaining high-quality standards.
  • Understanding of OH&S and food safety regulations.
  • Excellent teamwork and communication skills.
  • Requires formal qualification and at least 12 months relevant work experience.
