Head Chef – Captain Baxter, St Kilda

Captain Baxter is looking for a passionate Head Chef to lead the charge.

Located right on the sand in St Kilda, Captain Baxter is known for its all-day vibes. The food direction focuses on modern Asian flavours, with a strong emphasis on Snacks, small plates, charcoal grilling and bold, vibrant dishes designed to share, have fun, and be social. The venue features weekend DJ sessions and a full summer calendar of events.

We’re after a Head Chef who’s confident, organised, creative, and ready to lead a solid team in a high-profile, high-volume venue.

You’ll Be Responsible For

Leading and mentoring a passionate kitchen team

Driving consistency, quality, and smooth service

Developing menus with a current modern Asian style

Delivering across à la carte, banquets, and events

Managing food costs, rosters and ordering

Creating a culture that’s fast, fun, and team-first

We’re Looking For

Experienced head chef or Snr sous chef ready for first head chef role

Strong knowledge of modern Asian flavours

Comfortable in fast-paced kitchens, from casual to premium

Calm under pressure, clear communicator, natural leader

Systems & Tool (Preferred but not essential)

Experience or confidence with:

Deputy (rostering)

SUPY (kitchen management & ordering) or similar kitchen software programmes Costimator/cooking the books

Tripleseat (event coordination)

SevenRooms (reservations & guest management)

Basic computer literacy and confidence using digital systems are essential.

Operating Hours

Thursday dinner from 5pm

All day Friday, Saturday & Sunday

Full-time role (38 hrs/week under Restaurant Award)

Balanced rosters and paid overtime
