Pholklore is looking for an experienced and grounded Head Chef to lead our kitchen operations within a system that is already proven and in place. We’re not looking for someone to reinvent the wheel, we’re after someone who can learn and master our operational systems, and then add value by enhancing consistency, efficiency, and team performance.

This role sits within a larger organisational structure across multiple venues. Success in this position will require the ability to operate within a shared ecosystem, work collaboratively with the wider leadership team, and manage your kitchen as part of something bigger, not just as a standalone operation.

You’ll bring strong people leadership, a high level of digital literacy, and an understanding of hospitality systems and workflows. You’ll also be responsible for weekly kitchen reporting and for implementing Pholklore’s HR policies, rostering practices, and operational procedures.

Key Responsibilities

System Execution

Learn and follow the existing Pholklore kitchen systems and standards.

Apply our workflows, prep guides, and service models consistently across all shifts.

Collaborate with senior BOH leadership to maintain consistency across venues.

People Leadership

Lead, train, and develop your kitchen team to ensure skill growth, accountability, and strong culture.

Handle onboarding, performance management, and conflict resolution using Pholklore’s HR systems and frameworks.

Support roster creation, labour cost management, and ensure appropriate staffing levels at all times.

Kitchen Operations

Oversee all kitchen operations including food preparation, service, cleanliness, and compliance.

Ensure food is delivered to spec, every time, across all sections.

Manage stock control, supplier relationships, ordering, and invoice processing.

Digital Systems & Reporting

Use software such as Restoke, Tanda, and other internal platforms to manage inventory, operations, and staffing.

Provide weekly kitchen reports covering performance, costs, team development, and key priorities.

Leverage digital tools for training, scheduling, reporting, and communication.

Compliance & Safety

Ensure the kitchen operates in full compliance with food safety, OH&S, and hygiene requirements.

Maintain all required records and documentation related to compliance and reporting.

Support the implementation of health and safety procedures in line with group policies.

Requirements

Minimum 3 years’ experience in a Head Chef or senior BOH leadership role.

Ability to work within a structured, system-based environment.

Strong leadership and team-building skills.

Demonstrated digital literacy, with experience using hospitality platforms (Restoke, Tanda, etc).

Sound understanding of HR processes, staff management, and performance documentation.

Strong communication skills and the ability to collaborate across multiple departments and venues.

Culinary qualification or equivalent experience preferred.
