About Us
The Alpine Hotel is seeking an experienced and talented Sous Chef to join our team in Bright, Victoria.
The Alpine Hotel Bright has two fully functional kitchens on two levels within the building.
Both levels accommodate large group bookings, events, standard dining facilities and outdoor dining.
This locally owned and operated family venue is proud to support the community and welcome visitors.
What you'll be doing
Preparing, cooking and presenting dishes to company standard
Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety
Monitoring portion and waste control to
Maintain profit margins, wage and food costs
Backing up the head chef on all kitchen operations
Managing adequate stock levels in all kitchens
Running and expediting a multifaceted kitchen during busy services (full hands-on role)
Work with and support the Head Chef to lead the kitchen team and ensure the highest food standards and consistency are maintained
Maintaining a clean and safe kitchen
Assisting with the management of kitchen inventory and supplies
Assisting with events and functions, and marking food presentation
What we're looking for
Culinary training and experience preferred
A Diploma of Hospitality Management or a Certificate 4 in Training and Assessment will be a favourable credential
A food safety supervisor qualification is essential
Solid track record of career progression since qualified
Must have a Minimum of 3 years of CDP (Senior) or 1 year of Junior Sous Chef experience in a similar setting
Proven strong Leadership experience and work history, with the ability to lead a kitchen of 8-12 people
Hands-on training and planned development for our chefs and kitchen hands
Sound understanding of stock inventory, ordering, wages % and COG %
Maintain kitchen hygiene, OHS and understanding of HACCP standards.
Grill, pan, fryer, bulk production cooking and preparation experience (baking and pastry experience will be highly regarded)
Demonstrate problem-solving and critical thinking skills on the job
Exceptional attention to detail and a commitment to high standards of food quality and safety
Proof of communication skills to work effectively with the broader kitchen and hospitality teams
Culinary skills with a strong understanding of seasonal, regional and contemporary Australian cuisine
Proven time management, organisational and problem-solving abilities
Availability over weekends, holidays and events
